How the afternoon goes
From the herb patch to the pasta board to the table, here's how your afternoon unfolds.
We meet in the garden
You'll find Pasquale waiting by the gate, usually with muddy hands from the garden. We start with a short walk around the grounds, where you'll gather wild herbs growing between the vines, the same ones that go into the ravioli filling.
Hands in the dough
Back at the table, Rosanna shows you how her mother-in-law rolled pasta by hand, no machine, just a wooden board and a rolling pin. You'll make the dough, fill it with the herbs and ricotta you gathered, and shape each ravioli yourselves. While the water comes to the boil, you'll whip together a tiramisù the traditional way, the same recipe passed down through four generations.
We sit down and eat
Everyone sits together at the long table, often under the pergola if the weather's kind. You'll eat the ravioli you made, finish with the tiramisù, and stay as long as the conversation runs, with a glass of the family's own wine alongside it.
